What makes Byron Beef Jerky different?
We pioneered clean, air-dried jerky in Australia over 18 years ago. We developed the technology and process to make this possible and were the first to make the specific claim. Made from 100% Australian grass-fed beef, our jerky is high in protein, low in sugar, and packed with bold, natural flavour.
We started with a mission: create better jerky using real food. Our founders combined a love for bold flavour with clean ingredients and traditional air-drying methods.
Right here in the Byron Bay hinterland village of Bangalow. Every batch is handcrafted in small runs by a team passionate about flavour, health, and authenticity.

INGREDIENTS & NUTRITION

Is Byron Beef Jerky made from grass-fed beef?
Yes! We use 100% Australian grass-fed and finished beef from trusted local farmers.
Very little. Most varieties contain less than 2g of sugar per serve. We never use sweetness to hide poor-quality meat or preservatives.
Yes, all of our jerky and meat sticks are gluten-free.
No way. We use only clean, real ingredients—no artificial preservatives, colours, or flavours.
Up to 22g of protein per 40g serve, depending on the flavour.
Because quality matters. We avoid fillers, excess sugar, and disguised preservatives like ‘celery powder’ to focus on clean, protein-rich, real beef snacks.
Yes, some flavours (like Teriyaki) contain soy and sesame—please check the ingredients if you have allergies.

SOURCING & SUSTAINABILITY

Where does your beef come from?
We source from 100% Australian farms—mainly in regional NSW and Queensland—with occasional supply from Victoria, Tasmania, and WA. All are grass-fed and finished and follow ethical practices.
Not currently, due to multi-layer food-safe materials, but we’re working on sustainable alternatives without compromising food safety.
We use low-impact air-drying, minimise additives, and prioritise sustainable packaging and ethical sourcing.

Yes. Many flavours are low-carb, high-protein, and sugar-free—ideal for keto and paleo diets.
Absolutely. It’s a protein-packed, low-carb recovery snack trusted by athletes and weekend warriors alike.
Yes—just check the spice level. Our biltong sticks are even used as teething aids, being high in iron, B12, and protein.

PRODUCT FEATURES & PROCESS

What drying method do you use?
We use traditional air-drying—no shortcuts, no blasting—resulting in dense, flavourful jerky that retains nutrition.
Because it’s made from real beef and nothing else. Most variants offer over 50% protein per 100g.
We pass all products over a vibrating screen before packing to ensure only full, quality pieces make it into your pack.
We handcraft in small batches and inspect each run, removing small or broken bits so only the best make it into your pack.
We believe jerky should be chewed, not crumbled. Our firmer texture comes from slow air-drying and avoiding moisture-retaining chemicals.

Is Byron Jerky gluten free?

Most of our flavours are naturally gluten free. Some marinades may contain soy or wheat, so please check the ingredient list on each product for allergen details.

Beef jerky is a high protein snack made from lean cuts of beef that are sliced, marinated and air dried to remove moisture. This process preserves the meat naturally while locking in flavour and nutrients.

Yes. All Byron Jerky products are made in Australia using 100 per cent grass fed Australian beef sourced from local farmers.

No artificial preservatives, flavour enhancers or nitrates are added to our jerky. We keep our ingredients simple and natural.

Unopened, our jerky can last up to 12 months when stored in a cool, dry place. Once opened, it is best consumed within three days or kept in the refrigerator.
